xchat is a nice one. very simplistic.

for customizing, mirc is your best bet. by far.

I like "TinyIRC" http://www.tinyirc.net/ It's gotta be the smallest client available, and it has plugin support.

Oh, also you can use the IRC plugins from the popular IM clients like Miranda and Trillian Pro. I have used the Miranda IRC client, quite small and simple.

agree with unsightly... miranda's irc client is teeny. trillian irc is also quite minimal, but most people dont like trillian's flashy/gaudy ui
